Dolcino
Wine
Freeman Vineyards Dolcino – 'little sweetie' in Italian – is a dessert style wine. It blends Sauvignon Blanc and Viognier from estate vineyards in New South Wales's Hilltops region.
The fruit is left on the vine until very late in the season. Around half of the grapes display Botrytis, which is a fungus that causes the berries to shrivel and become concentrated in flavour.
Immediately upon arrival at the winery, the fruit is pressed and its meagre juice is settled. Wild fermentation occurs over six months in a mixture of new and seasoned oak barrels.
Pale straw yellow, Freeman Vineyards Dolcino displays characteristic spicy ginger notes and citrus peel flavours with a lingering finish. Cellaring potential is three years.
